2Les contributions sont inégales – que penser, par exemple, d’une étude sur la cuisine arabe médiévale ou d’une autre sur les glacières qui ignorent les travaux de Maxime Rodinson ou de Xavier de Planhol sur les mêmes sujets ? – et l’ensemble est disparate – trop, sans doute, pour permettre des conclusions d’une grande portée…
